You can make them as a pattern brush in Adobe Illustrator. I use a combination of the zigzag filter and blends to create them.

Just out of curiosity, do you know of any guides online that detail on how to make guilloché patterns?

As suggested to me by a friend I've learned how to make spirograph-type patterns; is the process similar for this?

I haven't really found any online. I just learned by playing around with different blend and zig zag effects in Illustrator.
